Description

Ingredients

Scale
  • 4 medium zucchinis, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic, sauté until translucent.
  3. Add the chopped zucchinis and cook for about 5 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and let it simmer for 15 minutes until zucchinis are tender.
  6. Use an immersion blender to puree the soup until smooth.
  7. Stir in the heavy cream and season with salt and pepper.
  8. Serve hot, garnished with fresh basil.
