- 4 medium zucchinis, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream

Instructions
- Heat olive oil in a large pot over medium heat.
- Add the diced onion and minced garlic, sauté until translucent.
- Add the chopped zucchinis and cook for about 5 minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and let it simmer for 15 minutes until zucchinis are tender.
- Use an immersion blender to puree the soup until smooth.
- Stir in the heavy cream and season with salt and pepper.
