Ingredients

- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 cup chopped fresh parsley
- Oil for frying
Instructions
- Grate the zucchinis and sprinkle with salt. Let them sit for 10 minutes to draw out moisture.
- After 10 minutes, squeeze the grated zucchini in a clean kitchen towel to remove excess moisture.
- In a mixing bowl, combine the grated zucchini, flour, Parmesan cheese, egg, black pepper, garlic powder, and parsley. Mix well.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the zucchini mixture into the hot oil and flatten slightly.
- Fry until golden brown on both sides, about 3-4 minutes per side.
- Remove from the pan and drain on paper towels.
- Serve warm with your favorite dipping sauce.
Notes
- For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
- These fritters can be baked instead of fried for a healthier option.
