Description

Delicious and crispy zucchini fritters that are perfect for a snack or a side dish.


Ingredients

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 cup chopped fresh parsley
  • Oil for frying

Instructions

  1. Grate the zucchinis and sprinkle with salt. Let them sit for 10 minutes to draw out moisture.
  2. After 10 minutes, squeeze the grated zucchini in a clean kitchen towel to remove excess moisture.
  3. In a mixing bowl, combine the grated zucchini, flour, Parmesan cheese, egg, black pepper, garlic powder, and parsley. Mix well.
  4. Heat oil in a frying pan over medium heat.
  5. Drop spoonfuls of the zucchini mixture into the hot oil and flatten slightly.
  6. Fry until golden brown on both sides, about 3-4 minutes per side.
  7. Remove from the pan and drain on paper towels.
  8. Serve warm with your favorite dipping sauce.

Notes

  • For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
