Ingredients

- 1 cup grated zucchini
- 1 cup rolled oats
- 1/2 cup almond flour
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the grated zucchini, rolled oats, almond flour, honey or maple syrup, melted coconut oil, and vanilla extract.
- Add the baking soda, cinnamon, and salt to the mixture and stir until well combined.
- If using, fold in the chocolate chips.
- Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
- Bake for 15-20 minutes or until the edges are golden brown.
- Allow to cool before serving.
Notes
- Make sure to squeeze out excess moisture from the zucchini before adding it to the mixture.
- These cookies can be stored in an airtight container for up to a week.
- Feel free to add nuts or dried fruits for extra flavor.
