Description

Delicious and healthy zucchini cookies that are easy to make and perfect for a snack or dessert.


Ingredients

Scale
  • 1 cup grated zucchini
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the grated zucchini, rolled oats, almond flour, honey or maple syrup, melted coconut oil, and vanilla extract.
  3. Add the baking soda, cinnamon, and salt to the mixture and stir until well combined.
  4. If using, fold in the chocolate chips.
  5. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  6. Bake for 15-20 minutes or until the edges are golden brown.
  7. Allow to cool before serving.

Notes

  • Make sure to squeeze out excess moisture from the zucchini before adding it to the mixture.
  • These cookies can be stored in an airtight container for up to a week.
  • Feel free to add nuts or dried fruits for extra flavor.
