Description

Ingredients

  • 1 cup grated zucchini
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup whole wheat flour
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. In a large bowl, mix the grated zucchini, honey (or maple syrup), melted coconut oil, eggs, and vanilla extract until well combined.
  3. In another bowl, whisk together the cocoa powder, whole wheat flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. If using, fold in the dark chocolate chips.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool before cutting into squares and serving.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to a week.
