Ingredients

- 1 cup grated zucchini
- 1/2 cup unsweetened cocoa powder
- 1/2 cup whole wheat flour
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup dark chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking pan.
- In a large bowl, mix the grated zucchini, honey (or maple syrup), melted coconut oil, eggs, and vanilla extract until well combined.
- In another bowl, whisk together the cocoa powder, whole wheat flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- If using, fold in the dark chocolate chips.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before cutting into squares and serving.
Notes
- Store leftovers in an airtight container in the refrigerator for up to a week.
- These brownies can be frozen for up to three months.
- Feel free to add nuts or dried fruit for extra texture.
