Description

Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 1 cup carrots, sliced
  • 1 cup potatoes, diced
  • 1 cup onions, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the beef cubes and brown on all sides.
  3. Remove the beef and set aside.
  4. Add onions and garlic to the pot, sauté until translucent.
  5. Stir in tomato paste, thyme, rosemary, and bay leaves.
  6. Add the beef back to the pot along with the beef broth.
  7. Bring to a boil, then reduce heat and simmer for 1 hour.
  8. Add carrots and potatoes, and continue to simmer for another 30 minutes or until vegetables are tender.
  9. Season with salt and pepper to taste.
  10. Remove bay leaves before serving.

Notes

  • For a thicker stew, you can add a cornstarch slurry.
  • Feel free to add other vegetables like peas or celery.
  • This stew can be made a day in advance for better flavor.
