Ingredients
2 cups white chocolate chips
1/2 cup heavy cream
1 tsp peppermint extract
1/4 cup crushed peppermint candies or candy canes
1/4 cup powdered sugar (for rolling)
Instructions
Melt the white chocolate:
In a heatproof bowl, place the white chocolate chips. Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer. Pour the hot cream over the white chocolate chips and let sit for 2-3 minutes. Stir until completely smooth.
Add the peppermint:
Stir in the peppermint extract and half of the crushed peppermint candies into the melted chocolate mixture.
Chill the mixture:
Let the mixture cool to room temperature, then cover it and refrigerate for about 2 hours, or until firm enough to scoop.
Form the truffles:
Once the mixture is chilled, use a small cookie scoop or spoon to form balls of the truffle mixture. Roll them between your palms to smooth them out.
Coat with powdered sugar:
Roll the truffles in powdered sugar, ensuring they are fully coated. This gives them a snowy, festive look!
Final peppermint touch:
Roll the truffles in the remaining crushed peppermint candies for an extra burst of peppermint flavor and crunch!
Chill again:
Place the truffles back in the refrigerator for at least 30 minutes before serving to allow them to firm up.

Make ahead: You can make these truffles a few days in advance! Keep them stored in an airtight container in the fridge.
