Ingredients
Scale
- 2 cups kale, chopped
- 1 large sweet potato, diced
- 1/2 cup quinoa, cooked
- 1/4 cup red onion, thinly sliced
- 1/4 cup walnuts, chopped
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the diced sweet potato with olive oil, salt, and pepper.
- Spread sweet potato on a baking sheet and roast for 25-30 minutes.
- In a large bowl, combine kale, cooked quinoa, red onion, walnuts, and feta cheese.
- Once sweet potatoes are done, let them cool slightly and add to the salad.
- Drizzle with lemon juice and toss well to combine.
- Serve immediately or chill in the refrigerator before serving.

- Store leftovers in an airtight container in the fridge for up to 2 days.
