Ingredients

Scale
  • 2 cups kale, chopped
  • 1 large sweet potato, diced
  • 1/2 cup quinoa, cooked
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup walnuts, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced sweet potato with olive oil, salt, and pepper.
  3. Spread sweet potato on a baking sheet and roast for 25-30 minutes.
  4. In a large bowl, combine kale, cooked quinoa, red onion, walnuts, and feta cheese.
  5. Once sweet potatoes are done, let them cool slightly and add to the salad.
  6. Drizzle with lemon juice and toss well to combine.
  7. Serve immediately or chill in the refrigerator before serving.
