- 1 cup bourbon
- 1 cup water
- 1 cup sugar
- 1 vanilla bean, split and scraped
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
Instructions
- Peel the pears, leaving the stems intact.
- In a saucepan, combine bourbon, water, sugar, vanilla bean and seeds, cinnamon, and lemon juice.
- Bring the mixture to a simmer over medium heat, stirring until the sugar dissolves.
- Add the pears to the saucepan and reduce the heat to low.
- Cover and poach the pears for about 20-30 minutes, or until tender.
- Remove the pears and let them cool slightly.
- Increase the heat and reduce the poaching liquid until it thickens slightly.
- Serve the pears drizzled with the syrup.
