Ingredients

  • Chocolate sandwich cookies (without cream filling): 22 cookies, crushed
  • Unsalted butter: 5 tablespoons, melted
  • Heavy cream: ¾ cup (for ganache)
  • Semi-sweet chocolate: 6 ounces, chopped
  • Heavy cream: 1 cup, cold (for filling)
  • Cream cheese (full-fat, brick style): 8 ounces, softened
  • Creamy peanut butter: 1½ cups
  • Confectioners’ sugar: ¾ cup
  • Vanilla powder or alcohol-free vanilla flavoring: 1 teaspoon
  • Whipped cream: optional, for topping
  • Chopped peanuts: optional, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Crush the chocolate cookies into fine crumbs and mix with melted butter.
  3. Press the mixture firmly into a pie dish to form the crust.
  4. Bake for 10 minutes, then let cool completely.
  5. Heat ¾ cup heavy cream until just boiling, then pour over the chopped chocolate.
  6. Stir until smooth and let the ganache cool to room temperature.
  7. Whip the cold heavy cream until stiff peaks form.
  8. In a separate bowl, beat the cream cheese, peanut butter, confectioners’ sugar, and vanilla powder until smooth.
