Description
This Unbelievable Peanut Butter Pie combines rich flavors of chocolate and peanut butter in a creamy dessert.
Ingredients
- Chocolate sandwich cookies (without cream filling): 22 cookies, crushed
- Unsalted butter: 5 tablespoons, melted
- Heavy cream: ¾ cup (for ganache)
- Semi-sweet chocolate: 6 ounces, chopped
- Heavy cream: 1 cup, cold (for filling)
- Cream cheese (full-fat, brick style): 8 ounces, softened
- Creamy peanut butter: 1½ cups
- Confectioners’ sugar: ¾ cup
- Vanilla powder or alcohol-free vanilla flavoring: 1 teaspoon
- Whipped cream: optional, for topping
- Chopped peanuts: optional, for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- Crush the chocolate cookies into fine crumbs and mix with melted butter.
- Press the mixture firmly into a pie dish to form the crust.
- Bake for 10 minutes, then let cool completely.
- Heat ¾ cup heavy cream until just boiling, then pour over the chopped chocolate.
- Stir until smooth and let the ganache cool to room temperature.
- Whip the cold heavy cream until stiff peaks form.
- In a separate bowl, beat the cream cheese, peanut butter, confectioners’ sugar, and vanilla powder until smooth.
- Gently fold the whipped cream into the peanut butter mixture.
- Spread the filling evenly over the cooled crust.
- Pour the chocolate ganache on top and smooth it out.
- Refrigerate for at least 6 hours or overnight until fully set.
- Garnish with whipped cream or chopped peanuts before serving if desired.
Notes
- Make sure the cookies and chocolate do not contain alcohol-based flavorings.
- For a firmer pie, chill overnight before slicing.
- Use natural peanut butter for a less sweet, more intense flavor.
- The pie can be stored in the refrigerator for up to 4 days.
