Golden, buttery shortbread topped with rich caramel, crunchy pecans, and smooth chocolate – these Turtle Pecan Cookie Bars are the ultimate sweet treat!
Ingredients
For the cookie base:
1 cup unsalted butter, softened 
1 cup brown sugar, packed 
1/2 cup granulated sugar 
2 large eggs 
1 teaspoon vanilla extract 
2 1/2 cups all-purpose flour 
1 teaspoon baking soda 
1/2 teaspoon salt 
1 cup chopped pecans 
For the caramel layer:
1 cup caramel sauce 
1/2 cup chopped pecans 
For the chocolate topping:
1 cup chocolate chips 
1 tablespoon vegetable oil 
Instructions
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract. In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chopped pecans.
Spread the cookie dough evenly in the prepared baking pan. Bake for 20-25 minutes, or until the edges are lightly golden. Remove from the oven and let cool for about 10 minutes.
Drizzle the caramel sauce over the warm cookie base, then sprinkle the additional chopped pecans on top.
In a microwave-safe bowl, combine the chocolate chips and vegetable oil. Microwave in 30-second intervals, stirring in between, until melted and smooth. Drizzle the melted chocolate over the caramel and pecans.
