  • 24 Oreo cookies, finely crushed

  • 4 eggs, room temperature
  • 10 oz bittersweet chocolate, chopped
  • For the Chocolate Topping:
  • ¾ cup heavy cream
  • 6 oz bittersweet chocolate, finely chopped
  • 1 tablespoon granulated sugar
  • Optional: chocolate curls for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. Crush the Oreo cookies finely in a food processor. Mix in melted butter until fully moistened.
  3. Press the mixture into the bottom of the pan. Bake for 6 minutes. Remove and let cool on a wire rack while preparing the filling.
  4. Melt the 10 oz of bittersweet chocolate and let it cool slightly.
  5. In a large bowl, beat cream cheese with powdered sugar until smooth. Mix in the cocoa powder.
  6. Add eggs one at a time, mixing on low speed—do not overbeat.
  7. Fold in the melted chocolate on low speed until combined.
  8. Pour the filling over the cooled crust and smooth the top.
  9. Bake 1 to 1¼ hours, until the center is set and the top looks dry.
  10. Let cool for 5 minutes on a wire rack. Run a thin knife around the edges and refrigerate uncovered for at least 8 hours or overnight.
  11. In a medium saucepan over low heat, stir together cream, chopped chocolate, and sugar until smooth and fully melted.
  12. Let cool slightly, then pour over the cheesecake.
  13. Once the topping sets and cools, run a knife around the edges and remove the springform pan sides.
  14. Optional: top with chocolate curls.
  15. Store in the refrigerator, covered, for up to 2–3 days.
