- For the Crust:
- 24 Oreo cookies, finely crushed
- ¼ cup unsalted butter, melted
- For the Cheesecake Filling:
- 2 lbs cream cheese, room temperature
- 1 ½ cups powdered sugar
- 3 tablespoons cocoa powder
- 4 eggs, room temperature
- 10 oz bittersweet chocolate, chopped
- For the Chocolate Topping:
- ¾ cup heavy cream
- 6 oz bittersweet chocolate, finely chopped
- 1 tablespoon granulated sugar
- Optional: chocolate curls for garnish
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
- Crush the Oreo cookies finely in a food processor. Mix in melted butter until fully moistened.
- Press the mixture into the bottom of the pan. Bake for 6 minutes. Remove and let cool on a wire rack while preparing the filling.
- Melt the 10 oz of bittersweet chocolate and let it cool slightly.
- In a large bowl, beat cream cheese with powdered sugar until smooth. Mix in the cocoa powder.
- Add eggs one at a time, mixing on low speed—do not overbeat.
- Fold in the melted chocolate on low speed until combined.
- Pour the filling over the cooled crust and smooth the top.
- Bake 1 to 1¼ hours, until the center is set and the top looks dry.
- Let cool for 5 minutes on a wire rack. Run a thin knife around the edges and refrigerate uncovered for at least 8 hours or overnight.
- In a medium saucepan over low heat, stir together cream, chopped chocolate, and sugar until smooth and fully melted.
- Let cool slightly, then pour over the cheesecake.
- Once the topping sets and cools, run a knife around the edges and remove the springform pan sides.
- Optional: top with chocolate curls.
- Store in the refrigerator, covered, for up to 2–3 days.
