Triple Berry Pie: 7 Steps to Pure Dessert Bliss

Description

A delicious Triple Berry Pie made with fresh or frozen berries.


Ingredients

  • Pie Crust: Homemade pie crust for a 9” deep-dish pan (2 crusts: one bottom, one top)
  • 7 cups fresh or frozen berries (raspberries, blueberries, blackberries; about 2 ⅓ cups each)
  • 1 cup granulated sugar (plus extra for sprinkling)
  • 1 Tablespoon lemon juice
  • 4 Tablespoons cornstarch
  • 2 Tablespoons butter
  • 1 large egg white, beaten

Instructions

  1. In a large saucepan over medium heat, add berries, sugar, and lemon juice.
  2. Simmer gently for 5–10 minutes, stirring occasionally. Taste and adjust sweetness if needed.
  3. Remove about ½ cup of the juice from the pan into a small bowl. Stir in cornstarch until smooth.
  4. Return the saucepan to a simmer and slowly pour in the cornstarch mixture, stirring carefully to avoid crushing the berries. Cook 2–5 minutes until thickened.
  5. Remove from heat, stir in butter, and let cool for 15 minutes.
  6. Pour the cooled filling into an unbaked pie shell.
  7. Add a top crust or lattice crust. Pinch the edges together and crimp. Brush with beaten egg white and sprinkle lightly with sugar.
  8. Preheat oven to 400°F. Bake for 40–45 minutes.
  9. Check after 25 minutes; cover with foil if crust is browning too fast.
  10. Cool on a wire rack for several hours before serving.
  11. For a lattice crust, roll out top crust into a circle 1–2 inches larger than pie edge, cut strips, and weave them over the filling. Trim excess dough and crimp edges.

Notes

  • Frozen mixed berries work perfectly and save prep time.
  • Fillings can be prepared up to 3 months ahead and frozen. Bake or assemble pie after thawing overnight in the fridge.
  • Baked pie can be frozen for up to 3 months. Thaw overnight in the fridge before serving.
