Description
Delicious Tiramisu Cookie Cups with layers of coffee-chocolate and mascarpone cream.
Ingredients

- 1 ½ cups crushed chocolate cookies (such as Oreos)
- 4 tbsp unsalted butter, melted
- ⅓ cup strong brewed espresso, cooled
- ⅓ cup semi-sweet chocolate chips
- 2 tbsp unsalted butter
- ½ cup heavy cream
- 1 tbsp cornstarch
- 1 cup mascarpone cheese, room temperature
- ½ cup heavy cream, cold
- ⅓ cup powdered sugar
- 1 tsp vanilla extract
- Unsweetened cocoa powder
- Optional: chocolate shavings or mini chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- Combine the crushed cookies and melted butter in a bowl, mixing until the texture resembles wet sand. Press the mixture into the bottom of each liner.
- Bake for 5 minutes, then allow to cool completely.
- In a small saucepan, combine the espresso, chocolate chips, and butter. Melt over low heat until smooth.
- In a separate bowl, whisk the heavy cream and cornstarch until lump-free. Gradually add this to the saucepan, stirring until it thickens.
- Remove from heat and cool to room temperature.
- In a bowl, beat the mascarpone, powdered sugar, and vanilla until smooth. In another bowl, whip the cold heavy cream until stiff peaks form.
- Fold the whipped cream into the mascarpone mixture until combined.
- Add 1-2 tablespoons of either filling onto the cookie base. Smooth the layer, then add the opposite filling. Repeat until the liners are nearly full.
- Chill the cups for 10 minutes between layers for stability.
- Sift cocoa powder over the top of each cup. Garnish with chocolate shavings or mini chocolate chips if desired.
- Refrigerate for at least 4 hours or overnight to set.
Notes
- For a non-alcoholic version, omit the coffee liqueur.
- Adjust espresso strength to taste for milder or bolder flavor.
