Description

Delicious Tiramisu Cookie Cups with layers of coffee-chocolate and mascarpone cream.


Ingredients

  • 1 ½ cups crushed chocolate cookies (such as Oreos)
  • 4 tbsp unsalted butter, melted
  • ⅓ cup strong brewed espresso, cooled
  • ⅓ cup semi-sweet chocolate chips
  • 2 tbsp unsalted butter
  • ½ cup heavy cream
  • 1 tbsp cornstarch
  • 1 cup mascarpone cheese, room temperature
  • ½ cup heavy cream, cold
  • ⅓ cup powdered sugar
  • 1 tsp vanilla extract
  • Unsweetened cocoa powder
  • Optional: chocolate shavings or mini chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Combine the crushed cookies and melted butter in a bowl, mixing until the texture resembles wet sand. Press the mixture into the bottom of each liner.
  3. Bake for 5 minutes, then allow to cool completely.
  4. In a small saucepan, combine the espresso, chocolate chips, and butter. Melt over low heat until smooth.
  5. In a separate bowl, whisk the heavy cream and cornstarch until lump-free. Gradually add this to the saucepan, stirring until it thickens.
  6. Remove from heat and cool to room temperature.
  7. In a bowl, beat the mascarpone, powdered sugar, and vanilla until smooth. In another bowl, whip the cold heavy cream until stiff peaks form.
  8. Fold the whipped cream into the mascarpone mixture until combined.
  9. Add 1-2 tablespoons of either filling onto the cookie base. Smooth the layer, then add the opposite filling. Repeat until the liners are nearly full.
  10. Chill the cups for 10 minutes between layers for stability.
  11. Sift cocoa powder over the top of each cup. Garnish with chocolate shavings or mini chocolate chips if desired.
  12. Refrigerate for at least 4 hours or overnight to set.

Notes

  • For a non-alcoholic version, omit the coffee liqueur.
  • Adjust espresso strength to taste for milder or bolder flavor.
