A hearty chili recipe featuring ground beef and beans, perfect for gatherings.
Ingredients

- 2 lbs. ground beef (80% lean)
- 2 cloves garlic, diced
- 8 oz. tomato sauce
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon ground oregano
- 1 teaspoon salt
- ¼ teaspoon cayenne pepper
- ¼ cup masa harina (white or yellow)
- 15 oz. kidney beans, drained and rinsed
- 15 oz. pinto beans, drained and rinsed
- 14.5 oz. diced tomatoes (Instant Pot method only)
Instructions
- Brown ground beef in a large pot over medium heat; drain excess grease.
- Add garlic and tomato sauce; cook 1 minute.
- Stir in chili powder, cumin, oregano, salt, and cayenne. Reduce heat to low.
- Cover and simmer for 1 hour, stirring occasionally. Add up to ½ cup water if dry.
- Mix masa harina with ½ cup water and stir into chili.
- Add beans and simmer for 10 minutes. Adjust thickness as desired.
- Serve with garnishes.
- For Crock Pot: Brown beef and drain grease. Add garlic, tomato sauce, and seasonings; stir. Transfer to crock pot. Stir in masa mixture and beans. Cook on low for 4 hours or longer, adjusting consistency as needed.
- For Instant Pot: Sauté beef until browned; drain grease. Add garlic, tomato sauce, and seasonings. Stir in masa mixture, diced tomatoes with juice, and beans. Pressure cook on Chili/Beans setting for 20 minutes. Release pressure and serve.
Notes
- Flour, cornmeal, or cornstarch mixed with water may substitute for masa harina.
- Adjust water or masa to reach preferred thickness.
