- ¾ cup sourdough discard
- ¾ cup shredded sharp cheddar cheese
- Kosher salt, for sprinkling
Instructions
- Preheat oven to 375°F (190°C) with two racks spaced evenly.
- In a mixing bowl, rub butter into flour with your hands until the texture resembles sand.
- Add sourdough discard and mix gently. Stir in shredded cheddar until a dough ball forms.
- Place dough between two sheets of parchment paper and roll out as thin as possible.
- Cut into small squares with a pastry wheel and transfer to parchment-lined baking sheets.
- Sprinkle generously with kosher salt.
- Bake for 10–13 minutes, switching trays halfway through, until crisp with lightly browned edges.
- Cool on the baking sheets, then serve or store in an airtight container for up to 2 days.
