Ingredients

  • 2 tablespoons softened butter
  • 2 tablespoons (28 g) melted butter
  • 1 cup warm milk (about 105 to 110 degrees F)
  • ⅓ cup warm water (about 105 to 110 degrees F)
  • ¼ cup (53 g) granulated sugar
  • 2 ¼ teaspoons instant yeast
  • 3 ¼ cups (462 g) all-purpose flour
  • 2 teaspoons salt
  • 1 cup (212 g) packed light brown sugar
  • 2 teaspoons ground cinnamon
  • ½ cup (113 g) butter, melted
  • 1 cup (114 g) confectioners’ sugar
  • 2 tablespoons milk

Instructions

  1. In a large measuring cup or bowl, mix together the milk, water, melted butter, sugar, and yeast.
  2. In a stand mixer fitted with the dough hook, add the flour and salt. With the mixer on low speed, add the milk mixture. Increase to medium speed and knead until the dough is smooth, 5 to 7 minutes.
  3. Add additional flour if the dough is sticking. The dough should be soft and slightly sticky.
  4. Place the dough in a greased bowl, cover, and let it rise until doubled, 1 to 2 hours.
  5. Spread softened butter in a 12-cup bundt pan.
  6. Lightly punch down the dough. Press it into a rectangle or square, about 8 or 9 inches across. Cut the dough into 64 small pieces.
  7. Roll each piece into a ball. Combine brown sugar and cinnamon in a bowl.
  8. Dip each dough ball in melted butter then roll in the sugar mixture. Place in the prepared bundt pan.
  9. Cover the pan and let the bread rise until puffy, 1 to 2 hours.
  10. Preheat the oven to 350 degrees F. Bake for 30 to 35 minutes until golden brown.
  11. Cool in the pan for no longer than 5 minutes. Turn onto a platter.
  12. Whisk confectioners’ sugar and milk until smooth. Drizzle over the warm monkey bread. Serve warm.

Notes

  • Monkey Bread without a Mixer: Mix flour and salt in a bowl. Make a well and add the milk mixture. Stir until shaggy, then knead until smooth.
  • Make-Ahead Instructions: After assembling, cover and refrigerate the pan for up to 12-18 hours. Let it come to room temperature before baking.
