Ingredients

  • 2 tbsp cocoa powder
  • 1 tsp baking powder
  • ¼ tsp salt
  • 225 g (1¼ cups) dark chocolate, chopped
  • 56 g (¼ cup) butter, salted or unsalted
  • 2 eggs, room temperature
  • 100 g (¾ cup) caster or granulated sugar
  • 90 g (½ cup) demerara or raw sugar
  • 1 tsp vanilla extract
  • 85 g (½ cup) dark or milk chocolate chips

Instructions

  1. Preheat the Oven: Preheat to 160°C (320°F) fan or 170°C (338°F) conventional. Line a baking tray with parchment paper.
  2. Melt Chocolate & Butter: Place the chopped chocolate and butter in a heatproof bowl over gently simmering water. Stir until melted and smooth. Remove from heat and stir in the vanilla. Set aside to cool slightly.
  3. Whip Eggs & Sugars: In a medium bowl, whisk the eggs, caster sugar, and demerara sugar on high speed for about 5 minutes until very pale, thick, and fluffy.
  4. Mix Dry Ingredients: Sift together the flour, cocoa powder, baking powder, and salt. Stir in the chocolate chips.
  5. Combine: Gently fold the melted chocolate mixture into the whipped eggs. Carefully fold in the dry ingredients just until combined.
  6. Bake: Scoop tablespoons of batter onto the prepared tray, leaving space between each. Bake for 12–14 minutes, until the tops are crackly and set but still soft inside.
  7. Cool & Finish: Optional: sprinkle lightly with flaky sea salt straight out of the oven. Let cool on the tray for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Do not overbake: The centers should look slightly underdone—they firm up as they cool.
  • Demerara sugar: Adds crunch and depth of flavor. You can substitute turbinado or raw sugar.
  • Even baking: Use a cookie scoop for uniform size.
  • Cooling matters: Letting them rest on the tray prevents breakage.
