- 1/2 cup butter, softened
- 1/3 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cup all-purpose flour
- 1 tbsp corn starch
- 1/4 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup fresh blueberries, washed and dried
- 1–1.5 tbsp blueberry jam
- 3 tbsp butter (for streusel)
- 2 tbsp brown sugar (for streusel)
- 2 tbsp granulated sugar (for streusel)
- 1/3 cup flour (for streusel)
- Pinch of salt (for streusel)
- Pinch of cinnamon (for streusel)
Instructions
- In a small bowl, combine all streusel ingredients using a fork or fingers until crumbly. Set aside.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream the butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract, mixing until smooth.
- Gently fold in the flour, corn starch, baking powder, baking soda, and salt.
- Fold in the blueberries carefully, so they don’t bleed into the dough.
- Drop small dollops of blueberry jam onto the dough and lightly swirl with a chopstick, knife, or small spatula. Don’t overmix—keep visible streaks of jam.
- Scoop 8 equally sized dough balls onto the prepared baking sheet and top each with streusel.
- Bake for 13–14 minutes. Let cookies cool on the baking sheet for 15–20 minutes before handling—they will be soft.
Notes
- Store in an airtight container at room temperature for up to 4 days or in the fridge for up to 7 days.
- Handle gently when removing from the baking sheet, as these cookies are soft and delicate.
