Ingredients

  • 1/2 cup butter, softened
  • 1/3 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cup all-purpose flour
  • 1 tbsp corn starch
  • 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup fresh blueberries, washed and dried
  • 11.5 tbsp blueberry jam
  • 3 tbsp butter (for streusel)
  • 2 tbsp brown sugar (for streusel)
  • 2 tbsp granulated sugar (for streusel)
  • 1/3 cup flour (for streusel)
  • Pinch of salt (for streusel)
  • Pinch of cinnamon (for streusel)

Instructions

  1. In a small bowl, combine all streusel ingredients using a fork or fingers until crumbly. Set aside.
  2. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  3. Cream the butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract, mixing until smooth.
  4. Gently fold in the flour, corn starch, baking powder, baking soda, and salt.
  5. Fold in the blueberries carefully, so they don’t bleed into the dough.
  6. Drop small dollops of blueberry jam onto the dough and lightly swirl with a chopstick, knife, or small spatula. Don’t overmix—keep visible streaks of jam.
  7. Scoop 8 equally sized dough balls onto the prepared baking sheet and top each with streusel.
  8. Bake for 13–14 minutes. Let cookies cool on the baking sheet for 15–20 minutes before handling—they will be soft.
