A refreshing and healthy Thai quinoa salad packed with vibrant flavors.
Ingredients
Scale
- 1 cup quinoa
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup peanut or almond butter
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 teaspoon sesame oil
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and water. Bring to a boil.
- Reduce heat and simmer for 15 minutes or until water is absorbed.
- Fluff quinoa with a fork and let it cool.
- In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, and cilantro.
- Add cooled quinoa to the bowl.
- In a small bowl, whisk together peanut butter, soy sauce, lime juice, and sesame oil.
- Pour the dressing over the salad and toss well.
- Serve immediately or chill in the refrigerator before serving.
Notes
- Adjust dressing ingredients to taste.
- Can add grilled chicken or tofu for protein.
- Store leftovers in an airtight container for up to 3 days.
