Description

Texas Sheet Cake Bites are small, moist chocolate cake bites topped with rich chocolate frosting.


Ingredients

  • 2 cups granulated sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup salted butter
  • 3/4 cup water
  • 5 Tablespoons cocoa powder
  • 1/2 cup buttermilk
  • 2 large eggs beaten
  • 1/3 cup buttermilk (for frosting)
  • 1/2 cup butter (for frosting)
  • 5 Tablespoons cocoa powder (for frosting)
  • 1 pound powdered sugar
  • 1 teaspoon vanilla

Instructions

  1. Preheat oven to 325° F. Prepare mini muffin tins by lining with mini paper liners or spray with non-stick spray and dust with cocoa powder or flour.
  2. Whisk granulated sugar, flour, baking soda, and salt in a large bowl. Set aside.
  3. Combine butter, water, and cocoa powder in a medium saucepan. Bring to a boil, then remove from heat and pour into dry ingredients. Mix gently.
  4. Fold in buttermilk and eggs. Blend well. Batter will be thin.
  5. Using a 1 Tablespoon cookie scoop, place one scoop of batter in each mini muffin cup. Bake for 10 to 12 minutes.
  6. Remove from oven. If liners were not used, allow to cool in the pan for 5 minutes before removing with a knife.
  7. Place on wire racks to cool completely before frosting.
  8. For frosting, heat milk, butter, and cocoa in a medium saucepan until boiling. Remove from heat and whisk in powdered sugar and vanilla until smooth.
  9. Spoon a tablespoon of frosting over each bite. Frosting will set after a few minutes. Serve and enjoy!
