Description
Texas Sheet Cake Bites are small, moist chocolate cake bites topped with rich chocolate frosting.
Ingredients

- 2 cups granulated sugar
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup salted butter
- 3/4 cup water
- 5 Tablespoons cocoa powder
- 1/2 cup buttermilk
- 2 large eggs beaten
- 1/3 cup buttermilk (for frosting)
- 1/2 cup butter (for frosting)
- 5 Tablespoons cocoa powder (for frosting)
- 1 pound powdered sugar
- 1 teaspoon vanilla
Instructions
- Preheat oven to 325° F. Prepare mini muffin tins by lining with mini paper liners or spray with non-stick spray and dust with cocoa powder or flour.
- Whisk granulated sugar, flour, baking soda, and salt in a large bowl. Set aside.
- Combine butter, water, and cocoa powder in a medium saucepan. Bring to a boil, then remove from heat and pour into dry ingredients. Mix gently.
- Fold in buttermilk and eggs. Blend well. Batter will be thin.
- Using a 1 Tablespoon cookie scoop, place one scoop of batter in each mini muffin cup. Bake for 10 to 12 minutes.
- Remove from oven. If liners were not used, allow to cool in the pan for 5 minutes before removing with a knife.
- Place on wire racks to cool completely before frosting.
- For frosting, heat milk, butter, and cocoa in a medium saucepan until boiling. Remove from heat and whisk in powdered sugar and vanilla until smooth.
- Spoon a tablespoon of frosting over each bite. Frosting will set after a few minutes. Serve and enjoy!

- Ensure all ingredients are at room temperature for better mixing.
- Store leftovers in an airtight container.
