Description
A hearty and flavorful beef stew with fluffy dumplings.
Ingredients

- 2 lb chuck beef, cut into 1½-inch cubes
- 2 tbsp all-purpose flour
- 2 tsp tomato paste
- 2 qt beef stock
- 1 large onion, chopped
- 4 garlic cloves, minced
- 3 cups potatoes, peeled and cut into chunks
- 4–5 carrots, sliced ½-inch thick
- 1 tsp fresh rosemary, finely chopped
- 2 sprigs fresh thyme
- 2 tsp sea salt
- 1 tsp freshly ground black pepper
- Oil or butter for searing
- 1 cup all-purpose flour (for dumplings)
- 2 tsp baking powder
- 1/2 tsp sea salt (for dumplings)
- 1 tbsp unsalted butter, room temperature (for dumplings)
- 1/3 to 1/2 cup milk (for dumplings)
- Fresh parsley and chives, chopped (optional)
Instructions
- Season beef with salt and pepper, then coat with flour. Heat oil or butter in a pot and sear beef on both sides for 2–3 minutes. Remove and set aside.
- In the same pot, sauté onion until softened. Add carrots, potatoes, rosemary, salt, pepper, garlic, and tomato paste. Stir well.
- Return beef to the pot. Pour in beef stock to cover. Bring to a simmer, reduce heat to low, add thyme, cover, and cook for about 2 hours.
- Mix flour, baking powder, salt, and herbs for dumplings. Rub in butter until crumbly. Gradually add milk until a sticky dough forms. Do not overmix.
- Remove thyme stems. Drop spoonfuls of dumpling dough into the stew. Cover and cook for 20 minutes on the stove, or place uncovered in a 350°F (175°C) oven for crisp tops.
- Garnish with fresh parsley and serve hot.
Notes
- Avoid overcrowding the pot when searing beef.
- Dumplings should remain light and airy; avoid kneading the dough.
- The stew thickens naturally as dumplings cook.
