Ingredients

  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • 1 medium onion, thinly sliced
  • 2 garlic cloves, crushed
  • 1 tbsp fresh ginger, grated
  • 1.2 cups (300 ml) full-fat coconut milk
  • Zest and juice of 1 large lemon

Instructions

  1. Preheat oven to 350°F (180°C).
  2. Season cod fillets evenly with salt and black pepper.
  3. In a skillet over medium heat, add olive oil.
  4. Sauté sliced onion until translucent.
  5. Add grated ginger and crushed garlic; cook for 1 minute until fragrant.
  6. Pour in coconut milk and bring to a gentle simmer.
  7. Stir in lemon zest and juice.
  8. Place cod fillets in a baking dish in a single layer.
  9. Pour the coconut-lemon sauce over the fish.
  10. Bake for 20–25 minutes, until the cod flakes easily with a fork.
  11. Spoon extra sauce over the cod and serve warm with rice or vegetables.
