- 21 oz (600 g) cod fillets
- Salt and black pepper, to taste
- 2 tbsp olive oil
- 1 medium onion, thinly sliced
- 2 garlic cloves, crushed
- 1 tbsp fresh ginger, grated
- 1.2 cups (300 ml) full-fat coconut milk
- Zest and juice of 1 large lemon
Instructions
- Preheat oven to 350°F (180°C).
- Season cod fillets evenly with salt and black pepper.
- In a skillet over medium heat, add olive oil.
- Sauté sliced onion until translucent.
- Add grated ginger and crushed garlic; cook for 1 minute until fragrant.
- Pour in coconut milk and bring to a gentle simmer.
- Stir in lemon zest and juice.
- Place cod fillets in a baking dish in a single layer.
- Pour the coconut-lemon sauce over the fish.
- Bake for 20–25 minutes, until the cod flakes easily with a fork.
- Spoon extra sauce over the cod and serve warm with rice or vegetables.
