Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup pumpkin puree
  • 1 cup sugar
  • 1/2 cup sour cream
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix graham cracker crumbs and melted butter.
  3. Press the mixture into the bottom of a greased baking dish.
  4. In a bowl, beat cream cheese until smooth.
  5. Add pumpkin puree, sugar, sour cream, eggs, and vanilla. Mix until combined.
  6. Stir in cinnamon, nutmeg, ginger, and salt.
  7. Pour half of the mixture over the crust.
  8. Drop spoonfuls of the remaining mixture on top and swirl with a knife.
  9. Bake for 30-35 minutes or until set.
  10. Cool and refrigerate for at least 2 hours before cutting.
