Sweet Potato and Cheddar Bites are cheesy, savory snacks made from sweet potatoes and cheddar cheese.

- 2 large sweet potatoes, peeled and diced
- 1 cup shredded sharp cheddar cheese
- 1/2 cup panko bread crumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg, beaten
- Salt and pepper, to taste
- Fresh chives or parsley, chopped (for garnish)
- Olive oil spray (optional)
Instructions
- Preheat the oven to 400°F (200°C). Place the diced sweet potatoes on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until tender. Allow to cool slightly.
- Transfer the baked sweet potatoes to a mixing bowl and mash until smooth. Let cool for a few minutes.
- Add the cheddar cheese, panko bread crumbs, Parmesan, and beaten egg to the mashed sweet potatoes. Season with salt and pepper, then mix until well combined.
- Roll the mixture into small balls (about 1 inch in diameter) and place on a baking sheet lined with parchment paper.
- Lightly spray the bites with olive oil (optional) for a crispier texture. Bake for 15-20 minutes or until golden and slightly crispy on the outside.
- Garnish with fresh chives or parsley. Serve warm and enjoy!
Notes
- For extra crispiness, try cooking the bites in an air fryer at 375°F for 10-12 minutes.
- Prepare and freeze uncooked bites, then bake directly from frozen.
