Delicious bites made with sweet potatoes and cheddar cheese.
Ingredients

- 2 medium sweet potatoes, peeled and cubed
- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs
- 1/4 cup chopped green onions
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 egg, beaten
Instructions
- Preheat oven to 400°F (200°C).
- Boil sweet potatoes until tender, about 15 minutes.
- Drain and mash sweet potatoes in a bowl.
- Add cheddar cheese, breadcrumbs, green onions, garlic powder, salt, pepper, and egg. Mix well.
- Form mixture into small balls and place on a baking sheet.
- Bake for 20-25 minutes or until golden brown.
Notes
- Serve warm as an appetizer or snack.
- You can add spices to taste.
- Store leftovers in the fridge for up to 3 days.
