Description

A delightful strawberry cake topped with cream cheese whipped cream frosting that is perfect for babies and young children.


Ingredients

  • 1 ½ cups sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract

  • 8 oz cream cheese, softened
  • 1 cup heavy whipping cream
  • ½ cup powdered sugar
  • Fresh strawberries for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract and strawberry puree.
  5. In another bowl, whisk together the flour and baking powder.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined.
  7. Divide the batter evenly between the prepared cake pans and smooth the tops.
  8. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  10. For the frosting, beat the cream cheese until smooth, then gradually add the powdered sugar.
  11. In a separate bowl, whip the heavy cream until stiff peaks form, then fold it into the cream cheese mixture.
  12. Once the cakes are completely cool, spread a layer of frosting between the two layers and on top of the cake.
  13. Garnish with fresh strawberries before serving.
