Ingredients

  • 1 large tart apple, cored and thinly sliced (about 1 ½ cups)
  • 4 ounces feta cheese, crumbled (about 1 cup)
  • ½ cup walnuts, toasted and coarsely chopped

Instructions

  1. In a large bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and black pepper until well combined.
  2. Add the baby spinach to the bowl with the vinaigrette and toss gently to coat.
  3. Add sliced apple, crumbled feta, and toasted walnuts. Toss gently again to combine.
  4. Serve immediately as a fresh, crisp salad.
