- For the Vinaigrette:
- 3 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon Dijon mustard
- ½ teaspoon honey
- ¼ teaspoon kosher salt
- ⅛ teaspoon freshly ground black pepper
- For the Salad:
- 1 (5-ounce) bag baby spinach (about 5 packed cups)
- 1 large tart apple, cored and thinly sliced (about 1 ½ cups)
- 4 ounces feta cheese, crumbled (about 1 cup)
- ½ cup walnuts, toasted and coarsely chopped
Instructions
- In a large bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and black pepper until well combined.
- Add the baby spinach to the bowl with the vinaigrette and toss gently to coat.
- Add sliced apple, crumbled feta, and toasted walnuts. Toss gently again to combine.
- Serve immediately as a fresh, crisp salad.
Notes
- The vinaigrette can be prepared up to a week in advance and stored in an airtight container in the refrigerator.
- Dried cranberries, pomegranate seeds, or sliced red onion add extra flavor and color.
