  • 4 oz (about 115g) Feta Cheese
  • 2 Cloves Garlic
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1/4 Teaspoon Red Pepper Flakes (Optional)
  • Salt and Freshly Ground Black Pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Brush one side of each bread slice with olive oil.
  2. Heat olive oil in a skillet. Sauté minced garlic until fragrant, then add spinach and cook until wilted.
  3. Transfer spinach to a sieve and press down to remove excess moisture.
  4. In a bowl, whisk eggs. Add squeezed spinach, crumbled feta, red pepper flakes, salt, and pepper. Mix gently.
  5. Spread the egg mixture evenly on the bread slices.
  6. Bake for 12-15 minutes until the egg is set and the bread is toasted.
