- 4 Large Eggs
- 5 oz (about 150g) Fresh Spinach
- 4 oz (about 115g) Feta Cheese
- 2 Cloves Garlic
- 2 Tablespoons Extra Virgin Olive Oil
- 1/4 Teaspoon Red Pepper Flakes (Optional)
- Salt and Freshly Ground Black Pepper
Instructions
- Preheat your oven to 400°F (200°C). Brush one side of each bread slice with olive oil.
- Heat olive oil in a skillet. Sauté minced garlic until fragrant, then add spinach and cook until wilted.
- Transfer spinach to a sieve and press down to remove excess moisture.
- In a bowl, whisk eggs. Add squeezed spinach, crumbled feta, red pepper flakes, salt, and pepper. Mix gently.
- Spread the egg mixture evenly on the bread slices.
- Bake for 12-15 minutes until the egg is set and the bread is toasted.
- Let cool slightly, then serve warm.
