Description

A flavorful and easy-to-make spicy salmon sushi bake that combines sushi rice and a creamy salmon mixture.


Ingredients

  • 2 cups sushi rice, uncooked
  • 2½ cups water
  • ¼ cup rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt
  • 1 lb (450 g) fresh salmon fillet, skinless and diced
  • ½ cup mayonnaise
  • 2 tbsp Sriracha sauce (or to taste)
  • 1 tsp sesame oil
  • ½ cup green onions, chopped (plus extra for garnish)
  • 1 sheet nori, cut into small strips (optional)
  • Tobiko, to taste (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook the sushi rice according to package instructions.
  3. Rinse the rice under cold water until the water runs clear, then cook with the water until tender.
  4. In a small bowl, mix the rice vinegar, sugar, and salt until fully dissolved.
  5. Once the rice is cooked, fluff it gently with a fork and fold in the vinegar mixture while the rice is still warm.
  6. Spread the seasoned rice evenly in the bottom of a lightly greased baking dish. Let it cool slightly.
  7. In a separate bowl, combine the salmon, mayonnaise, Sriracha, sesame oil, and green onions. Mix until well combined. Adjust spice to taste.
  8. Spread the salmon mixture evenly over the rice.
  9. Bake for 25–30 minutes, or until the salmon is fully cooked and the top is lightly golden.
  10. Remove from the oven and let it cool for a few minutes.
  11. Garnish with extra green onions, nori strips, and tobiko if using.
  12. Serve warm and enjoy by scooping with a spoon or nori sheets.

Notes

  • Substitutions: Salmon can be replaced with cooked crab or shrimp.
  • Milder version: Reduce the Sriracha or omit it completely.
  • Serving idea: Serve with soy sauce on the side for dipping.
  • Storage: Store leftovers in the refrigerator for up to 2 days. Reheat gently.
