Instructions
- Rinse sushi rice under cold water until water runs clear.
- Combine rice and water in a pot and bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- Remove from heat and let sit for 10 minutes.
- Mix rice vinegar and sugar; fold into rice.
- In a bowl, combine diced tuna, mayonnaise, and sriracha.
- Place a sheet of nori on a bamboo mat.
- Spread a thin layer of rice on nori, leaving a border.
- Add tuna mixture, cucumber, and avocado.
- Roll tightly and slice into pieces.
