- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 lemon, juiced and zested
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Place the chicken breasts in the slow cooker.
- In a bowl, mix together the chicken broth, lemon juice, lemon zest, garlic, thyme, rosemary, salt, and pepper.
- Pour the mixture over the chicken in the slow cooker.
- Add the rice on top of the chicken and broth mixture.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours.
- Once cooked, fluff the rice with a fork and serve garnished with fresh parsley.
Notes
- For added flavor, marinate the chicken in lemon juice and herbs for a few hours before cooking.
- Feel free to add vegetables like peas or carrots for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days.
