- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 lemon, juiced and zested
- 2 tablespoons olive oil
- 3 cloves garlic, minced

- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a slow cooker, combine the chicken breasts, rice, chicken broth, lemon juice, lemon zest, olive oil, garlic, thyme, rosemary, salt, and pepper.
- Stir to combine all ingredients well.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and the rice is tender.
- Once cooked, shred the chicken with two forks and stir it back into the rice.
- Garnish with fresh parsley before serving.
