Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 lemon, juiced and zested
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. In a bowl, mix the rice, onion, garlic, chicken broth, lemon juice, lemon zest, thyme, rosemary, salt, and pepper.
  3. Pour the rice mixture over the chicken in the slow cooker.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and the rice is tender.
  5. Once cooked, fluff the rice with a fork and serve garnished with fresh parsley.
