Description

Slow Cooker Italian Beef Sandwiches are savory, tender beef served on toasted buns with melted cheese.


Ingredients

  • 3 lbs chuck roast, excess fat trimmed
  • Kosher salt and black pepper
  • 1 tablespoon olive oil
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1 teaspoon dried thyme
  • 1 teaspoon onion powder
  • 1/8 teaspoon crushed red pepper flakes
  • 14.5 oz can beef broth
  • 8 oz sliced pepperoncini
  • 1/3 cup pepperoncini liquid (from the jar)
  • 1/2 yellow onion, thinly sliced
  • 1/2 red bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • Hoagie buns or rolls
  • Softened butter, for buns
  • Provolone cheese slices
  • 8 oz giardiniera (mild or spicy), optional

Instructions

  1. Season the chuck roast generously with salt and black pepper.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Sear the roast on all sides until deeply golden brown, a few minutes per side. Transfer the roast to the slow cooker.
  3. In a small bowl, mix together basil, oregano, parsley, thyme, onion powder, and crushed red pepper flakes. Sprinkle evenly over the beef.
  4. Add the beef broth, pepperoncini, pepperoncini liquid, onion, bell pepper, and garlic to the slow cooker. Stir gently.
  5. Cover and cook on LOW for 8 hours, or HIGH for 3–4 hours, until the beef is very tender.
  6. Remove the beef, shred with two forks, and return it to the slow cooker with the juices and vegetables.
  7. Preheat the broiler. Butter the inside of the buns and place them butter-side up on a baking sheet. Broil until lightly toasted.
  8. Using a slotted spoon, place the shredded beef mixture onto the toasted buns. Top with provolone cheese.
  9. Top with giardiniera if desired and serve immediately.
