- 2 lbs boneless, skinless chicken breasts
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup cream cheese
- 1 cup shredded cheese (optional)
Instructions
- Place the chicken breasts in the slow cooker.
- Add the white beans, corn, diced tomatoes, onion, garlic, chicken broth, cumin, chili powder, salt, and pepper.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, shred the chicken in the slow cooker and stir in the cream cheese until melted and creamy.
- Serve hot, topped with shredded cheese if desired.
Notes
- For a spicier chili, add jalapeños or cayenne pepper.
- This recipe can be made ahead and stored in the refrigerator for up to 3 days.
- Leftovers can be frozen for up to 3 months.
