Ingredients

- 2 pounds chicken thighs, boneless and skinless
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup green peas, frozen
- 2 teaspoons dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a pan over medium heat.
- Brown the chicken thighs on both sides, about 5 minutes.
- Transfer the chicken to the slow cooker.
- Add carrots, potatoes, onion, garlic, and broth to the slow cooker.
- Season with thyme, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- In the last 30 minutes, add the green peas.
- Serve hot.
