Ingredients

  • 2 pounds chicken thighs, boneless and skinless
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup green peas, frozen
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Brown the chicken thighs on both sides, about 5 minutes.
  3. Transfer the chicken to the slow cooker.
  4. Add carrots, potatoes, onion, garlic, and broth to the slow cooker.
  5. Season with thyme, salt, and pepper.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  7. In the last 30 minutes, add the green peas.
  8. Serve hot.
