Ingredients

- 2 lbs chicken thighs, boneless and skinless
- 4 cups chicken broth
- 3 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup green beans, trimmed
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Place the chicken thighs in the slow cooker.
- Add the chicken broth, carrots, potatoes, onion, garlic, and green beans.
- Season with thyme, rosemary, salt, and pepper.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or on high for 4-5 hours.
- Once cooked, shred the chicken with two forks and stir back into the stew.
- Serve hot and enjoy!
Notes
- Feel free to add other vegetables like peas or corn.
- This stew can be frozen for up to 3 months.
