Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 4 cups chicken broth
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup frozen peas
  • 2 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp cornstarch (optional, for thickening)

Instructions

  1. Heat olive oil in a skillet over medium heat and brown the chicken thighs on both sides.
  2. Transfer the browned chicken to the slow cooker.
  3. Add the chopped onion, garlic, carrots, potatoes, and frozen peas to the slow cooker.
  4. Pour in the chicken broth and add thyme, salt, and pepper.
  5. Cover and cook on low for 6-8 hours or on high for 4-5 hours.
  6. If you prefer a thicker stew, mix cornstarch with a little water and stir it into the stew during the last 30 minutes of cooking.
  7. Serve hot and enjoy your cozy meal!
