Ingredients

- 2 lbs chicken thighs, boneless and skinless
- 4 cups chicken broth
- 3 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup frozen peas
- 2 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 2 tbsp cornstarch (optional, for thickening)
Instructions
- Heat olive oil in a skillet over medium heat and brown the chicken thighs on both sides.
- Transfer the browned chicken to the slow cooker.
- Add the chopped onion, garlic, carrots, potatoes, and frozen peas to the slow cooker.
- Pour in the chicken broth and add thyme, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 4-5 hours.
- If you prefer a thicker stew, mix cornstarch with a little water and stir it into the stew during the last 30 minutes of cooking.
- Serve hot and enjoy your cozy meal!
Notes
- Feel free to add other vegetables like celery or bell peppers.
- This stew can be made a day in advance and reheated.
- Leftovers can be stored in the refrigerator for up to 3 days.
