Ingredients

  • 1 onion, diced
  • 1 large carrot, diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon salt
  • ½ cabbage, chopped
  • 1 can (14 oz) diced tomatoes
  • 46 cups vegetable broth (adjust to desired thickness)
  • 12 tablespoons lemon juice
  • ¼ cup fresh parsley, roughly chopped
  • Cracked black pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add onion, carrot, and celery and cook for 4–5 minutes until softened.
  2. Add garlic, oregano, basil, and salt, stirring for about 1 minute until fragrant.
  3. Add chopped cabbage and cook for 5 minutes, stirring frequently, until it begins to soften.
  4. Pour in vegetable broth and diced tomatoes. Simmer uncovered for about 10 minutes, or until vegetables are tender to your liking.
  5. Remove from heat, stir in lemon juice, parsley, and cracked black pepper, then serve warm.

  • Let soup cool completely before storing; it keeps 4–5 days in the refrigerator.
