Simple Cabbage Vegetable Soup is a healthy and comforting dish packed with vegetables.
Ingredients

- 2 tablespoons olive oil
- 1 onion, diced
- 1 large carrot, diced
- 2 celery stalks, diced
- 2 garlic cloves, minced
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
- ½ teaspoon salt
- ½ cabbage, chopped
- 1 can (14 oz) diced tomatoes
- 4–6 cups vegetable broth (adjust to desired thickness)
- 1–2 tablespoons lemon juice
- ¼ cup fresh parsley, roughly chopped
- Cracked black pepper, to taste
Instructions
- Heat olive oil in a large pot over medium-high heat. Add onion, carrot, and celery and cook for 4–5 minutes until softened.
- Add garlic, oregano, basil, and salt, stirring for about 1 minute until fragrant.
- Add chopped cabbage and cook for 5 minutes, stirring frequently, until it begins to soften.
- Pour in vegetable broth and diced tomatoes. Simmer uncovered for about 10 minutes, or until vegetables are tender to your liking.
- Remove from heat, stir in lemon juice, parsley, and cracked black pepper, then serve warm.
Notes
- Let soup cool completely before storing; it keeps 4–5 days in the refrigerator.
- Can be frozen in airtight containers for up to 3 months.
- You can customize by adding other vegetables or herbs you enjoy.
