Description

A hearty and flavorful Sicilian chicken soup packed with vegetables and spices.


Ingredients

  • 1 whole chicken, cut into pieces
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 cup green beans, trimmed
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat a large pot over medium heat.
  2. Add onion, carrots, and celery. Sauté until soft.
  3. Add garlic and cook for another minute.
  4. Add chicken pieces and brown on all sides.
  5. Pour in diced tomatoes and chicken broth.
  6. Add green beans, oregano, basil, salt, and pepper.
  7. Bring to a boil, then reduce heat and simmer for 30 minutes.
  8. Remove chicken, shred the meat, and return to the pot.
  9. Serve hot, garnished with fresh parsley.
