A refreshing and crunchy salad with a zesty sesame ginger dressing.


Ingredients

  • 2 tablespoons grapeseed oil or other neutral oil
  • 2 tablespoons soy sauce or tamari
  • Juice of 1 large lime
  • 2 teaspoons brown sugar
  • 1 teaspoon sesame oil
  • 2 small cloves garlic, grated
  • 1 teaspoon freshly grated ginger
  • Crushed red pepper flakes, to taste
  • 10 oz shredded carrots
  • 1 large red bell pepper, chopped
  • 1/2 cup chopped fresh cilantro
  • 3 scallions, sliced
  • 1/2 cup chopped peanuts or cashews
  • Salt and black pepper, to taste
  • Sesame seeds (optional)
  • Additional cilantro (optional)

Instructions

  1. In a small bowl or jar, whisk together grapeseed oil, soy sauce, lime juice, brown sugar, sesame oil, garlic, ginger, and red pepper flakes. Set aside.
  2. In a medium bowl, combine shredded carrots, red bell pepper, cilantro, scallions, and peanuts or cashews.
  3. Pour the dressing over the salad and toss well until evenly coated.
  4. Season with salt and black pepper to taste.
  5. Garnish with sesame seeds and extra cilantro if desired. Serve immediately.

Notes

  • This salad is best served fresh for maximum crunch.
  • You can substitute cashews for peanuts if preferred.
