- 3 large eggs
- ¾ cup milk
- ⅓ cup olive oil
- 1 cup grated Gruyère or sharp Cheddar cheese
- 1 cup pitted olives, chopped
- 2 tablespoons chopped fresh parsley or chives
Instructions
- Preheat oven to 350°F (180°C). Line a 9×5-inch loaf pan with parchment paper.
- In a large bowl, whisk together flour, baking powder, salt, pepper, and dried herbs.
- In another bowl, beat eggs, then whisk in milk and olive oil.
- Add wet ingredients to dry ingredients and stir just until combined.
- Gently fold in cheese, olives, and fresh herbs.
- Pour batter into prepared pan and smooth the top.
- Bake for 40–45 minutes, until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a rack to cool completely before slicing.
Notes
- Avoid overmixing to keep the loaf tender.
- A mix of green and black olives adds extra flavor.
- Store in an airtight container at room temperature for 1–2 days or refrigerate for longer storage.
