Ingredients

  • 1 lb ground Italian sausage (hot or mild)
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 1 teaspoon dried basil
  • ½ teaspoon dried oregano
  • 1 pinch cayenne pepper (optional)
  • 1 teaspoon hot sauce
  • ½ teaspoon mustard powder
  • ¼ teaspoon black pepper
  • 1 pinch red pepper flakes
  • 1 cup heavy cream
  • 5 cups chicken broth
  • 2 cups kale, chopped
  • 2 cups cheese tortellini (about 10 oz, refrigerated or frozen)
  • Salt, to taste

Instructions

  1. In a large pot, cook sausage and diced onion over medium-high heat until sausage is fully cooked and onions are softened (8–10 minutes). Drain excess grease.
  2. Add garlic and cook for 1 minute. Stir in flour and cook for 1–2 minutes to remove the raw flour taste.
  3. Add basil, oregano, cayenne, hot sauce, mustard powder, black pepper, and red pepper flakes. Stir well to combine.
  4. Pour in chicken broth and scrape the bottom of the pot to release flavor. Slowly stir in the heavy cream. Bring to a gentle boil, then reduce to a simmer.
  5. Stir in kale and tortellini. Simmer for 3–5 minutes, or until tortellini is tender.
  6. Taste and add salt if needed (start with ¼ teaspoon). Serve hot.

Notes

  • Mustard powder and hot sauce enhance flavor without adding spiciness.
  • Add a Parmesan or Romano cheese rind for extra depth (discard before serving).
  • Spinach can replace kale—stir it in at the end and let it wilt for 30 seconds.
  • Great served with garlic bread or crusty bread.
