  • 1 pound Italian sausage
  • 1 cup cooked quinoa
  • 1 cup spinach, chopped

  • 1/2 teaspoon black pepper
  • 1/2 cup shredded cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the butternut squashes in half and scoop out the seeds.
  3. Place the squash halves cut side up on a baking sheet.
  4. In a skillet, cook the sausage over medium heat until browned.
  5. Add onion and garlic to the skillet, cooking until soft.
