- 1 pound Italian sausage

Instructions
- Preheat the oven to 400°F (200°C).
- Cut the butternut squashes in half and scoop out the seeds.
- Place the squash halves cut side up on a baking sheet.
- In a skillet, cook the sausage over medium heat until browned.
- Add onion and garlic to the skillet, cooking until soft.
- Stir in quinoa, spinach, oregano, salt, and pepper.
- Fill each squash half with the sausage mixture.
- Top with shredded cheese.
- Bake for 30-35 minutes until squash is tender.
