Ingredients

  • 5 tablespoons extra-virgin olive oil
  • 4 beef sausage links (2 mild, 2 spicy)
  • 2 medium yellow onions, spiralized and noodles trimmed
  • 1 red bell pepper, spiralized and noodles trimmed
  • 1 orange bell pepper, spiralized and noodles trimmed
  • 1½ tablespoons tomato paste
  • ¼ teaspoon red pepper flakes
  • 4 garlic cloves, minced
  • ½ teaspoon dried oregano
  • 1 cup low-sodium chicken broth
  • Salt and black pepper, to taste
  • 2 tablespoons finely chopped fresh parsley
  • 2 medium zucchini, spiralized and noodles trimmed

Instructions

  1. Heat 2 tablespoons of olive oil in a large lidded skillet over medium-high heat.
  2. Add the beef sausages and cover. Cook for about 7 minutes until browned on the bottom. Uncover and cook 5 minutes more, turning, until browned on the outside but not fully cooked through.
  3. Transfer sausages to a cutting board, slice into 1-inch pieces, and set aside.
  4. Add the remaining 3 tablespoons olive oil to the same skillet. Add the onion and bell pepper noodles. Cook for about 5 minutes until softened.
  5. Stir in the tomato paste, red pepper flakes, and garlic. Cook for 30 seconds until fragrant.
  6. Return the sliced sausage to the pan. Add oregano and broth. Season with salt and pepper.
  7. Cover and simmer for about 10 minutes until the sausage is cooked through. Uncover and simmer 5 more minutes until the sauce reduces slightly. Stir in parsley.
  8. Transfer mixture to a serving bowl and add the zucchini noodles. Toss until the zucchini begins to soften and is well combined.
  9. Serve immediately.

  • Zucchini noodles cook quickly from residual heat; avoid overcooking to keep them from becoming watery.
