Description

A deliciously rich and creamy salted caramel cheesecake cookie inspired by the popular Crumbl cookie.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup cream cheese, softened
  • 1/2 cup salted caramel sauce
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Add the eggs and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. In another bowl, beat the cream cheese until smooth, then fold in the salted caramel sauce.
  7. Take a scoop of cookie dough, flatten it slightly, and add a spoonful of the cream cheese mixture in the center. Fold the dough around the filling and shape it into a ball.
  8. Place the cookies on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes or until the edges are lightly golden.
  10. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For an extra touch, drizzle more salted caramel sauce on top of the cooled cookies.
  • Store cookies in an airtight container for up to a week.
