Ingredients

- 1 lb fingerling potatoes
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp fresh rosemary, chopped
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and dry the fingerling potatoes.
- Cut the potatoes in half lengthwise.
- In a bowl, toss the potatoes with olive oil, salt, pepper, garlic powder, and rosemary.
- Spread the potatoes on a baking sheet in a single layer.
- Roast for 25-30 minutes, or until golden brown and crispy.
- Serve hot.

- Try adding other herbs for different flavors.
- Make sure potatoes are evenly spaced on the baking sheet.
