Ingredients
For the cookies:
1 cup unsalted butter, softened
3/4 cup brown sugar
3/4 cup granulated sugar
1 teaspoon vanilla extract
2 large eggs
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups chocolate chips
For the filling:
12 Reese’s Peanut Butter Cups, unwrapped
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth. Add the vanilla extract and eggs, mixing well. In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips.
Take a tablespoon of cookie dough and flatten it in your hand. Place a Reese’s Peanut Butter Cup in the center and wrap the dough around it, forming a ball. Repeat with the remaining dough and Reese’s.
Place the cookie balls on the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked, but they will firm up as they cool.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy your delicious Reese’s stuffed chocolate chip cookies!
