Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- In a bowl, mix flour, sugar, baking soda, cocoa powder, and salt.
- In another bowl, combine oil, buttermilk, eggs, food coloring, vanilla, and vinegar.
- Mix the wet ingredients into the dry ingredients until just combined.
- Pour the batter into cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let the cupcakes cool completely.
- In a bowl, beat cream cheese and butter until smooth.
- Add powdered sugar and vanilla, mixing until creamy.
- Frost the cooled cupcakes with cream cheese frosting.
- Top each cupcake with a halved strawberry and a mini marshmallow to create a Santa hat.
