Description
A healthy and delicious raw carrot cake made from fresh ingredients.
Ingredients
Scale
- 2 cups grated carrots
- 1 cup walnuts
- 1 cup dates, pitted
- 1/2 cup shredded coconut
- 1/4 cup maple syrup
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1/4 cup raisins
Instructions
- Grate the carrots and set aside.
- In a food processor, blend walnuts and dates until they form a paste.
- Add grated carrots, shredded coconut, maple syrup, cinnamon, nutmeg, and salt to the mixture.
- Blend until well combined.
- Stir in raisins.
- Press the mixture into a cake pan.
- Refrigerate for at least 2 hours before serving.
- Slice and serve chilled.
Notes
- Store leftovers in the refrigerator.
- Can be topped with a vegan frosting if desired.
- Adjust sweetness by adding more or less maple syrup.
