A healthy and delicious raw carrot cake made from fresh ingredients.


Ingredients

Scale
  • 2 cups grated carrots
  • 1 cup walnuts
  • 1 cup dates, pitted
  • 1/2 cup shredded coconut
  • 1/4 cup maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1/4 cup raisins

Instructions

  1. Grate the carrots and set aside.
  2. In a food processor, blend walnuts and dates until they form a paste.
  3. Add grated carrots, shredded coconut, maple syrup, cinnamon, nutmeg, and salt to the mixture.
  4. Blend until well combined.
  5. Stir in raisins.
  6. Press the mixture into a cake pan.
  7. Refrigerate for at least 2 hours before serving.
  8. Slice and serve chilled.

Notes

  • Store leftovers in the refrigerator.
  • Can be topped with a vegan frosting if desired.
  • Adjust sweetness by adding more or less maple syrup.
